The history of this Southern staple was brought to the U.S. by Scottish immigrants, who fried their chicken in fat rather than baking – a method more common among immigrants from other parts of Europe. Some of these Scottish immigrants settled in the South, and when slaves were brought over from Africa to work as cooks, they added their own twist to the dish. Today, fried chicken enjoys universal appeal with many interpretations. And in Georgia, it’s found its way into the sandwich.
