My family loves this unusually flavorful way to introduce cranberries into our Thanksgiving meal! This is NOT your traditional cranberry sauce!
Ingredients:
- 12 oz cranberries
- 1 orange
- 2 T fresh lemon juice
- 2 T minced shallots
- 1 t powdered ginger
- 1/4 t cayenne pepper
- 1/2 t cumin
- 1 cup sugar
- 1/2 cup pistachios, chopped
- 1/2 cup dried figs, chopped
Directions:
- In a large saute pan, combine cranberries, orange cut into bite size pieces, lemon juice, shallots, ginger powder, cumin, cayenne, and sugar. Bring to a gentle biol. Stir until sugar dissolves and cranberries begin to pop open. Remove from heat and let cool.
- Fold in 1/2 cup chopped pistachios and 1/2 cup chopped drief figs or raisins. Yields 2 cups. Make up to 2 days ahead!
