Enjoy whenever you need a little pick-me-up!
Ingredients:
- 1 cup gluten-free oats (such as Bob’s Red Mill)
- ½ cup peanut butter
- 1/3 cup honey
- 1 cup coconut flakes
- ½ cup ground flaxseed or chia seeds
- ½ cup mini-chocolate chips (use Enjoy Life brand if you want dairy free)
- 1 tsp. vanilla extract
Preparation:
Mix everything in a medium bowl until thoroughly combined. Let chill in the refrigerator for 30 minutes. Roll into little bite-sized balls and store in an airtight container in the refrigerator.
