Healthy Mashed Potatoes

Healthy Mashed Potatoes (about half the calories of traditional mashed potatoes!)

  • Makes 6 (½ cup) servings

 

Ingredients:

  • 1½ pounds potatoes (yellow, gold, or red), scrubbed and cut into even sized chunks
  • ¾ cup reduced-sodium chicken broth
  • 2 cups onions, chopped
  • Salt and pepper, to taste
  • 2 tablespoons Smart Balance Light

 

Instructions:

  1. Add potatoes to a pot and cover with water. Bring to a boil, cover and simmer for about 15-20 minutes until tender.
  2. In the meantime, cook onions in the microwave for about 4 minutes, until soft.
  3. Add cooked onions and chicken broth to a blender and blend until smooth.
  4. Drain potatoes and place back in the pot.
  5. Add the Smart Balance, pureed onions, and broth and a little salt and pepper. Cook on medium heat and mash using a potato masher or the back of a fork until smooth and all the ingredients are heated.
