I was lucky enough to get to have lunch with one of my favorite people in the world on Monday. It was my dear friend Elizabeth T’s 75th birthday party! She chose The Swan Coach House Restaurant which I thought was “prissy” for my taste so I’ve never been in all my years of living in Atlanta! Well – I LOVED it! It was the perfect place for a birthday lunch! I had chicken salad (surprise!) and it was delish! However the food that “stole the show” was their famous “Frozen Fruit Salad”. YUMMY!
It is close but not quite the same as my husband’s Grandmother’s “famous” Frozen Fruit Salad. So…my lunch at the Swan House prompted me to share this delicious family recipe with all of you. It is so light and refreshing. Grandmother kept these in the freezer in cupcake holders for the Grandsons just in case they dropped by! I’m just lucky I joined the family in time to enjoy these treats made especially by Kirk’s sweet Grandmother before she passed away….I think she’d approve of me sharing her yummy recipe with you!
Grandmother’s Frozen Fruit Salad
- 1 small carton sour cream
- 1/2 cup sugar
- 2 tablespoons lemon juice
- 1/4 cup chopped maraschino cherries
- 1/2 cup nuts (pecans or walnuts)
- 1 cup crushed pineapple, drained
- 2 bananas, diced
- 1 cup cool whip
Stir together first 3 ingredients until creamy. Add remaining ingredients except cool whip. Stir. Fold in cool whip. Freeze in a 9 inch square pan and cut after frozen or you can use individual paper cupcake cups in a muffin pan to freeze for individual snacks later!
