Bacon Asparagus Pasta
Super simple. Cook bacon and remove. Cook asparagus in rendered bacon fat. Pour off extra fat and toss bacon and asparagus with pasta. Add Parmesan. My kids will eat anything with bacon. 🥓
Trader Joe’s braised beef with tater tots and balsamic glazed brussels sprouts.
I’m obviously trying to bulk up all the Townsends for winter.
Asian Lettuce Wraps
Asian lettuce wraps are one of my kids top 5 favorites.
Chop an onion and package of mushrooms and saute. Add a pound of ground meat, this is beef. Drain and add Kikkoman’s Kitchen hoisin sauce and toss in sliced water chestnuts. This is served on butter lettuce with a broccoli slaw (bagged mix tossed with ponzu and lime juice but can really be any acid).

Crispy Onion Strings
These are always in my pantry. Basically a crisper version of the kind that goes on green bean casserole, which I also love. I put them in soups (yes they get soggy), salads, pasta, steak, breakfast tacos, regular tacos, I will bubba blue this to death. The blurry photo is my child shoving her hand in the bag while i try to take a picture.
Town Center in Peachtree Corners is adorable. We came to check out Beard Papa, Japanese style creampuffs. A 100 thumbs up. Then we headed to the green space and grabbed ice cream from Revelator Coffee Company
