Asparagus, Peas, & Radishes with Fresh Tarragon

Ingredients:
  • 3 pounds asparagus, tough ends discarded, cut into 2-inch pieces
  • 3 tablespoons butter
  • 10 ounces fresh or frozen peas  
  • 1 bunch (about 1 pound) radishes, greens discarded, halved and thinly sliced
  • 1/3 cup fresh tarragon, coarsely chopped
  • Coarse salt and ground pepper

Mama’s Sweet Potato Casserole

Casserole Ingredients:

  • 4 1/2 lbs sweet potatoes
  • 1 cup sugar
  • 1/4 cup milk
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Topping Ingredients:

  • 1 1/4 cups cornflakes cereal, crushed
  • 1/4 cup chopped pecans
  • 1 tablespoon brown sugar
  • 1 tablespoon butter, melted
  • 1 1/2 cups miniature marshmallows

My family loves this unusually flavorful way to introduce cranberries into our Thanksgiving meal!   This is NOT your traditional cranberry sauce!

Ingredients:

  • 12 oz cranberries
  • 1 orange
  • 2 T fresh lemon juice
  • 2 T minced shallots
  • 1 t powdered ginger
  • 1/4 t cayenne pepper
  • 1/2 t cumin
  • 1 cup sugar
  • 1/2 cup pistachios, chopped
  • 1/2 cup dried figs, chopped
