Pork Limone

Serves 4-6
Ingredients:
- 3-inch section of Pork Loin OR (3) 1-inch boneless pork loin chops
- 1 cup all-purpose flour
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp Kosher Salt
- ½ tsp fresh ground Pepper
- ½ tsp Cajun seasoning (e.g., Emeril’s essence or Zataran’s Cajun seasoning)
- 3-4 tbsp extra virgin olive oil
- 1 cup chicken broth
- 1 cup dry white wine (chardonnay works best)
- Juice of 1 lemon
- 1-3 Tbsp capers (depending on preference)
- ½ cup grated parmesan cheese
