Stuffed Turkey Burgers

As I am writing this, I am breathing a huge sigh of relief. I just found out that I passed the Board Certification for Sports Dietetics (CSSD) after studying all summer! It is very timely, as all of my kids’ fall sports are now in full swing. Lucky for them, I get to implement all of the latest, greatest strategies I learned, including post-workout nutrition; i.e. dinner!

After practice it’s important that your athlete refuel with plenty of nutritious carbohydrates and lean protein. Try this recipe for Stuffed Turkey Burgers. You can pair it with roasted broccoli and bake sweet potato fries for a quick and healthy meal.

Stuffed Turkey Burgers turkey burker

  • 1 lb. lean ground turkey breast
  • ½ cup roasted red peppers, divided
  • ½ cup shredded mozzarella cheese, divided
  • ½ tsp. salt
  • Freshly ground black pepper
  • 4 whole grain hamburger buns

Divide the turkey into 4 equal-sized rounds. Make 2 equal-sized patties out of each round, so you have 8 patties total. Sprinkle 4 of the patties with 2 tablespoons each of roasted red peppers and cheese, and top with remaining patties working the turkey around the edges to seal burgers closed. Season with salt and black pepper. Grill or broil until cooked through, about 5 minutes per side.
