- 4 cups Clamato juice
- When I realized there were some unhealthy ingredients in Clamato juice I decided to modify this recipe and substitute organic tomato juice for the Clamato juice. To get some of the Clamato flavor I added extra onions, garlic, vinegar and hot sauce.
- 1/2 cup onion – minced
- 1/3 cup olive oil
- 1/3 cup red wine vinegar
- 1/4 cup green bell pepper – minced
- 3 Tablespoons parsley – chopped
- 2 cloves garlic- minced
- 1/4 teaspoon Hot Sauce (Tabasco, Texas Petes or our new fave….Old Bay hot sauce)
- salt & pepper to taste
- 8 medium tomatoes – chopped
- 2 cucumbers – chopped
- 2 avocados – chopped
- topping suggestions: sour cream, garlic croutons (I make gluten free croutons from GF bread), Parmesan cheese
Directions:
Combine Clamato juice, onion, olive oil, wine vinegar, green pepper, parsley, garlic, hot sauce, salt and pepper. Refrigerate 6 hours or overnight. Next day: add tomatoes, cucumbers and avocados. Refrigerate until all is cold. Serve very cold with sour cream/croutons/Parmesan cheese or whatever you prefer!
