This is a regular in my family dinner rotation. It’s super easy, cooks all day and can be used on its own with some sides, in a taco or my personal favorite on a hamburger bun with coleslaw on top. I’ve been making it so long that I don’t measure anything and I have no idea where I first found this recipe!

- 2 pounds of pork tenderloin (I tend to buy the ones at Costco and throw it all in and freeze leftovers if I make too much)
- 1/4 cup soy sauce
- 1.5 Tbsp. of yellow mustard
- 2 Tbsp. of olive oil
- 3 Tbsp. maple syrup
- 1 tsp. onion powder
- 1.5 tsp. garlic powder
- 1 shallot chopped (if I don’t have a shallot on hand, I use half of a white or yellow onion)

- Place pork tenderloins in slow cooker
Combine all the ingredients for the marinade into a bowl and whisk
Pour marinade over tenderloins and cook on low for about 6 hours.
Remove, slice or shred and pour juices over the top.
