My friend Katie is busy like all of the rest of us with young children and all their activities. She gave me a great quick and easy meal suggestion to share with all of you.
Here’s Katie’s note to me:
Cooking has gotten away from me a bit this season, as 3rd grade , football, cheerleading, etc is kicking my butt!!!
All of that to say-
Chicken Hobo Dinners save me-
Chicken breast, bone in( you can also use pork chops)
Veggies( broccoli , carrots, onions, zucchini -whatever you or your kids will eat)
New potatoes-small red, or regular-just quartered.
Tear a sheet of foil for each chicken breast you’re using-
Spray with olive oil-
Season chicken& all veggies with salt and pepper-lay in foil
Wrap up individually and seal tight.
Cook at 350 for 50-55 minutes
These require no dishes, pots, pans,etc
I set my oven’s to cook time while I’m gone-when I return-oven is off-dinner is done-nothing to clean. Everyone is happy:)
