Savory Cranberry Chutney

My family loves this unusually flavorful way to introduce cranberries into our Thanksgiving meal!   This is NOT your traditional cranberry sauce!

Ingredients:

  • 12 oz cranberries
  • 1 orange
  • 2 T fresh lemon juice
  • 2 T minced shallots
  • 1 t powdered ginger
  • 1/4 t cayenne pepper
  • 1/2 t cumin
  • 1 cup sugar
  • 1/2 cup pistachios, chopped
  • 1/2 cup dried figs, chopped

Directions:

  1. In a large saute pan, combine cranberries, orange cut into bite size pieces, lemon juice, shallots, ginger powder, cumin, cayenne, and sugar.  Bring to a gentle biol.   Stir until sugar dissolves and cranberries begin to pop open.   Remove from heat and let cool.
  2. Fold in 1/2 cup chopped pistachios and 1/2 cup chopped drief figs or raisins.  Yields 2 cups.  Make up to 2 days ahead!
